  Chicken Paprikash (Csirke pörkölt)

3 lb. chicken, cut into serving pieces
(breast, legs, wings)
1 tsp black pepper, ground
2 tbs. chicken fat (rendered and drained)
lard or oil
1 pinch of caraway seed, ground
2 lg. onions, chopped 3/4 c. chicken broth or water
1 tbs. paprika, sweet or mix with hot
(Hungarian preferred)
1 tbs. salt, or to taste
1 tomato, chopped 3/4 c. sour cream, optional
1 green pepper, chopped 2 c. mushroom, sliced (optional)
2 cloves garlic, pressed

    In a six quart Dutch oven sauté, onion for 3 minutes. Add chicken, paprika, black pepper, caraway, tomato, green pepper, and garlic. Stir, add liquid. Add 1 tbs. salt. Cover and cook very slowly on low heat. After 1/2 hour, add mushrooms. Stir occasionally. Add more liquid if needed. Cook until chicken is tender.
    Mix the sour cream with 1 tsp. of flour and pour into it. (If it is lumpy, use a strainer) Stir, and cook for a few minutes more.
Serve it over boiled rice or egg noodles or home made Dumplings. Serves four.

Dumplings (Nokedli, galuska, spaetzle)

3 c. flour 4 qt. water (add 1/2 tbs. salt)
1/4 tsp. salt 1 tsp. oil, butter or lard  
4 lg. eggs 1/4 tsp. salt or to taste
1/2 to 3/4c. water

    Bring to boil the 4 qt. of water in a 6 qt. pan. Mix in a bowl the flour, eggs, salt and the 1/2 c. water. Don't over mix, only to blend it together. Don't let it stand, by the time its mixed, the water should be boiling. Use a spaetzle maker. If not available take a cutting board and put 1/3 of the dough on it. Using a knife, first slice a 1/2" to 1" wide strip and cut the strip into small pieces, dropping it into the boiling water one by one. Stir the water occasionally.
Continue with the rest of the dough. Boil until all of them comes up to the top of the water (few minutes).
    Drain, and rinse it with hot water. Pour it into a saucepan over hot oil. Turn off the heat under the saucepan, and salt to taste before serving. Best served with chicken paprikash.
Makes 5 of a 1 cup serving.
